Menu Planning Help Needed!

If you are here to see what we are having for dinner this week, you are not going to see it. Nope. I am not posting it this week...but please don't leave! I need your help.

I've been working on planning my menu for the entire month! Whew, I know! I must be crazy!

Anyhow. I sat down and went through all my recipes and meals that I make for dinner. I made an excel document and put them all into columns by main ingredient (poultry, pork, beef, seafood, etc.) type and meal (meat with sides, casserole, slow cooker, pasta, etc.) type.

What I found out is that I am short on slow cooker recipes, fish/seafood recipes and meatless recipes.

Here is where YOU come in! I need your "tried and true" recipes for the slow cooker, fish/seafood recipes or meatless meal recipes.

You can either add them in the comment section or click on "view my complete profile" and follow the link to email them directly to me. Either way you choose to do it, please make sure you include your email address. Sometimes when I receive comments, they come in anonymous or have no email address with them. If I can't get a hold of you then you can't win the prize!

What prize?
Yes! There is a prize! Well actually, it's a THANK YOU for helping me out! I will put all the entries in a bowl and have my wonderful 8 year old daughter, Allison, pick a winner.

What will the winner receive?
Well! I am putting together a box that includes my most favorite things...and NO, you will not be receiving my daughter...unless she's not so wonderful on the day I'm packing up the box! What's in the box? Well it's a surprise...seriously, I'm not done with what's going in there but I can promise you...it's good. It's really good. So good in fact, I want to enter my own give-a-way! It's filled with things that I love and can't live without.

What do you have to do to be entered in my give-a-way?
1. Send me either a recipe or a link for a slow cooker recipe OR a fish/seafood recipe OR a meatless meal recipe that is "tried and true." You must have tried it and like it...let's be honest here. You will get 1 entry for each recipe or link.

Menu Plan Monday ~ Feb. 8th!

Wednesday - Halupki a.k.a. Stuffed Cabbage Rolls

Thursday - Cheesy Chicken & Rice Casserole (New Recipe for us)

Friday - It's Mom's Craft Night Out so Allison and I will have dinner out on our way there.

Saturday - Dinner at Grandma's

Sunday - It's Valentine's Day so for:
Breakfast: Pink Heart Shaped Pancakes with Sliced Heart Strawberries, whipped cream, Valentine Sprinkles and Strawberry Milk.
Lunch: Heart Shaped Grilled Cheese Sandwiches with Red Tomato Soup.
Dinner: Heart Shaped Mini Meatloaves, Pink Mashed Potatoes and Sugar Snap Peas.

Tuesday - Penne Pasta with Chicken & Mushrooms in Pink Sauce served with tossed salad and Texas toast.


Thursday - Chicken Enchiladas with Spanish Rice and lettuce & tomatoes.


Saturday - Burgers and Fries.

Menu Plan Monday ~ Jan 24th!

I'm giving myself a pat on the back!

I've been really good about planning my menus every week and sticking to them so far this year. I don't know why I ever get away from it every now and then. It really reduces my stress and definitely is better for the budget!

Menu Plan Monday ~ Oct. 19th!

Last week I didn't plan my menu. I flew by the seat of my pants. All I can say was it wasn't good. I don't know why it was stressful to me but it was. I like having dinner planned so I don't clutter my mind every day with "What do I make for dinner?"

So. Here's my menu for this week! I'm going simple and easy. I have a ton of things I want to accomplish this week so I don't want to waste too much time cooking in the kitchen!

Monday - Spaghetti with meat sauce, salad and fresh baked Italian bread.

Tuesday - Chicken fajitas.

Wednesday - Baked shrimp, rice pilaf and Prince Edward vegetable medley.

Thursday - Smoked sausage, potatoes, peppers and onions.

Friday - Homemade Pizza.

Saturday - Grilled cheese and tomato soup.

Sunday - Mesquite marinated pork chops, scalloped potatoes and green beans.

Menu Plan Monday ~ Sept. 28th!

Wow! It's Monday already and you know what happens on Monday!

I join Laura at I'm an Organizing Junkie for her Menu Plan Monday Party. Last week there were 430 bloggers who joined the party! Now that's what I call a party!

Here's my menu for the week:

Monday - We are going to Chili's for dinner to support St. Jude's Research Hospital. Today all Chili's give 100% of their profits from today's sales to St. Jude's. If you are able, take your family to a Chili's near you to help find a cure for childhood cancer.


Tuesday - Slow Cooker Baked Potato Soup with fresh baked bread.

Wednesday - Meatloaf, mashed potatoes and corn. (Yes, this was on last week's menu but we surprised Curtis for his birthday and met his family out for dinner so it was on my menu because he reads my blog.)

Friday - Homemade Pizza

Saturday
- Grilled Chicken Salads (Pittsburgh style)

Sunday
- Pork Tenderloin, with Lemon-Butter Red Potatoes and green beans.

Menu Plan Monday ~ Sept. 21st!

I'm a little late in posting my menu for this week. Last night I started to get a sore throat that has lead into a cold today so food isn't exactly what I've wanted to think about. However, what I've learned in the past few weeks, having a menu in place cuts down on my "what to make for dinner" stress. With that being said...here's my menu for the week.

Monday ~ Tuna Noodle Casserole (yes, this was on last week's but we had Chinese take-out one night so I never made it.) and green beans

Tuesday - Chicken Fajitas

Thursday - Meatloaf, mashed potatoes and corn.

Friday - Homemade Pizza Night.

Saturday - Leftovers

Sunday - Chicken Parmesan (again, this was on last week's menu but I never made it because I actually made Chicken Marsala as a surprise on Sunday for Curtis' birthday), over angel hair with tossed salad.

Menu Plan Monday ~ Sept. 14th!

Wow! It's been a little boring around my blog the last couple of weeks! Since Curtis reminds me often that I haven't posted, I better get to it!

Before I post my weekly menu, I posted a few weeks ago what I thought would be our last rose of the year. However, my little struggling rose bush decided to surprise us with her beauty this week. She produced only two roses this year. Curtis cut one and we left the other one the bush. Here is the one we cut to bring in and enjoy. Isn't she beautiful??

Menu Plan Monday ~ Sept. 7th!

It's Menu Plan Monday again at Organizing Junkie! Stop over there to see what other busy Moms have on their menu this week!

I'm so glad that I started doing my weekly menu plan again last week. It was SO nice knowing what I was making for dinner...one less thing I had to think about during the day!

Here's this week's:

Monday - Kathy's Delicious Whole Slow Cooker Chicken This is a new recipe for me. I've never done a whole chicken in a slow cooker but we are not going to be home during the day so I thought I would try it. I'm hoping it's a home run! I plan on serving Rice Pilaf and Green Beans with it. By the way, if you have a recipe for a whole chicken in the slow cooker, please let me know. I would love to try your recipe!

Tuesday - Steak Salad -Pittsburgh Style (for those of you that don't know, we put fries on top of our steak salads here!)

Wednesday - Mesquite Marinated Pork Chops with Roasted Potatoes and Lima Beans.

Thursday - Baked Shrimp with Broccoli Cheese Rice and Steamed Broccoli.

Friday - Homemade Pizza.

Saturday - Breaded Chicken Breasts, Mashed Potatoes and Corn.

Sunday - Spaghetti with Meat Sauce, Tossed Salad and Fresh Baked Italian Bread.

Menu Plan Monday ~ Aug 31st!

School is back in session so that means I need to get myself organized again! No more playing and flying by the seat of my pants!

This means I'm going to try really hard to get back to my weekly menu planning. Hopefully, as well as get my family eating regular homemade meals at home, this means I'll be able to post some more recipes on my cooking blog!

Monday - Stuffed Peppers with peppers from my Dad's garden!
Note: When you click on the link for the recipe, it takes you to my Halupki (Stuffed Cabbage) recipe. I basically do them the same way. Just follow the recipe down and you'll see I show stuffed peppers too.

Tuesday - Chicken Pot Pie

Wednesday - Pork Tenderloin with Scalloped Potatoes and Green Beans.

Menu Plan Monday ~ Dec. 1st!

Wow! Can you believe it's December already?!?
So that makes it 24 more days until Christmas!!
Are you hating me yet for the countdown?
So. Here's my menu for the week. I did really well last week and kept to most of last week's. We ended up having Chicken Fajitas on Sunday since there wasn't enough leftovers from Thanksgiving for what I had planned.

Monday - I'm working late and Allison is at her grandparents' today since there is no school so Grandma will be feeding my crew.

Friday - Homemade Pizza Night if I get home in time, if not it will be frozen Schwan's Pizza Night for Daddy and Allison.
Saturday - We are going to see a show in Pittsburgh so we'll be having dinner out.
Sunday - Baked Chicken, Scalloped Potatoes and Corn.

Menu Plan Monday ~ Nov. 24th!

Since things are starting to back in order around here, I thought I would help it along by posting my weekly menu again. I find that doing a weekly menu helps to eliminate some of the weekly stress of "What's for dinner tonight?"

Here's what we are having this week:
Monday - Stuffed Shells, Green Beans and Texas Toast.
Tuesday - Tuna Noodle Casserole.
Wednesday - Baked Potato Soup in the crock pot with fresh baked bread.
Thursday - 2 Thanksgiving meals at both of our families. I'll be taking Sweet Potato Casserole to Mom's and a dessert to Curtis's.
Friday - Allison is at Grandma and Pa Pa's all day and I'll be working late so Grandma is cooking for Allison and Daddy.
Saturday - Turkey Pot Pie with leftover turkey from Mom! I'm using my Chicken Pot Pie recipe and subbing turkey!
Sunday - If there is enough turkey leftovers, we'll have Hot Turkey Sandwiches with Mashed Potatoes and Gravy and Corn.

Menu Plan Monday ~ Sept. 29th!

It's the beginning of another week so it's time for Menu Plan Monday. After checking at what we'll be having for dinner this week, click on over to The Organized Junkie and see what hundreds of others are serving to their families this week too.
Since the weather is starting to cool down here and the leaves are starting to fall, it's time for some warm comfort food. Curtis requested Chicken Pot Pie a week or so ago so I thought it was time for it to appear on our menu. Also, the new recipe for Crock Pot Swiss Steak that I tried last week came out so yummy. If you want the recipe, you can check it out on my cooking blog.
Monday ~ Mom works late so it's up to Daddy to decide and make dinner for him and Allison.
Tuesday ~ Italian Smoked Sausage Pasta (I'll share this recipe on my cooking blog sometime this week.)
Wednesday - Tuna Noodle Casserole. This was on last week's menu but I had no plans of making it. It was there to cover for the surprise family get together we had at Curtis' brother's house for Curtis' birthday.
Thursday - Chicken Pot Pie.
Friday - Pizza Night.
Saturday - Dinner at Grandma's
Sunday - We are going to Oil City for a train ride with the Brownies so we'll probably be picking up take out somewhere on the way home for dinner.

Menu Plan Monday Family Favorites ~ Sept. 22nd!

It's a special week for Menu Plan Monday. It the Family Favorites Edition. Laura (who hosts Menu Plan Monday) asked to post one or more recipes or links for the items that are on our menu. This is so that all of you out in blogland will know that you will see a recipe on every person's menu they have posted. I can't say that the items on my menu this week are my family favorites but that's what's for dinner this week. It is my goal that every menu item I have posted will have a link to my cooking blog with the recipe. This will of course take some time so please stick with me. Last week Pierogi Skillet Dinner was on my menu. Click on the link to see that recipe. This week's menu:
Monday ~ I work late and usually it's Daddy's night to figure it out for him and Allison but this week, I prepped the ground beef and pizza sauce for him for Pronto Pasta Italiano. This is a good kid friendly meal. I'll heat the leftovers up Tuesday morning to put in Allison's thermos for her lunch. The recipe and the picture are both from Kraft Foods.
Tuesday ~ Since this next dish was on the menu a couple of weeks ago and we didn't get to it, Curtis has requested Southwest Chicken, oven fries & corn. This recipe is from a restaurant I used to work at years ago. It's so simple. You just bake or grill chicken breasts and then baste them with barbecue sauce just prior to them being done. Cover them with shredded cheddar cheese and put them under the broiler to melt the cheese. Once the cheese is melted, place them on the serving plate and sprinkle fresh diced tomatoes and bacon bits on top. Serve with extra barbecue sauce for dipping.

Wednesday ~ Tuna Noodle Casserole

Thursday ~ Slow Cooker Swiss Steak. This is a new recipe for me. Curtis loves the recipe that I found online somewhere but it's too tomatoey (if that's even a word). I found this recipe on Betty Crocker. It's almost identical to the other recipe except it adds beef gravy to it. I think this will solve my tomato problem.
Friday ~ Pizza Night.

This picture is mine and if you want the story of the odd looking pizza, click here. Oh and by the way, when you read that entry please know that I am not a home made pizza virgin any more! I made it a couple of Friday's ago when I was on vacation and it came out awesome! Curtis ate 8 pieces!
Saturday ~ Dinner at Grandmas.

Sunday ~ Pork Tenderloin. I am open to new recipes here! Please let me know if you have a recipe that you would like to share. I'll take any and all ideas...oven, slow cooker, etc. Thank you!

Menu Plan Monday ~ Sept. 15th!

I know. This is my second post of the day and it's not Monday yet. Am I nuts? Anyway. Laura posted Mister Linky a little earlier this week so I figure I might as well get mine posted too. After you check out my menu for the week, click on over to Laura's blog and see what everyone else has planned for their families.
Last week's menu went really well. I had to change the days a little. Miss Allison was sick on Wednesday so I moved the Chicken Noodle Soup to that day. I also loved the new recipe for Eggplant Parmesan. I'll be sharing that in the next couple of days on my new cooking blog. I also made homemade pizza this week for the VERY FIRST TIME! I couldn't believe I did it. I was so proud! Curtis ate 8 slices so I am guessing he liked it!

Menu Plan Monday ~ Sept. 8th!

Well the first week of menu planning went well. It definitely reduced my stress of what to have for dinner. We had a small change last week on Thursday so I'm going to recycle that item this week. I didn't change the menu but we went out to dinner with Curtis's side of the family for his brother's birthday. Monday - Stuffed Peppers (peppers from Dad's garden) in the Crockpot with Italian Bread. ( I work late on Monday nights. So I usually let Curtis decide what he is going to make but since I don't like Stuffed Peppers and it's his favorite. I thought I would surprise him and have it ready for him when he gets home.)

Tuesday - Baked Tilapia, Broccoli Cheese Rice & Chopped Broccoli. (Rescheduled from last week's menu.)

Wednesday - Eggplant (from Dad's garden) Parmesean with a Garden Salad. (I'm trying a new healthy way of doing it. If I like it, I'll share the recipe with all of you.)

Thursday - Southwest Chicken Breasts, Baked Fries and Green Beans.

Friday - Pizza Night.

Saturday - Dinner at Grandma's.

Sunday - Homemade Chicken Noodle Soup.

This Week's Menu...

One of the biggest dilemmas I face every week is what to have for dinner. You all know I like to cook but figuring out what's for dinner is a whole other story. I hate it! I really do. A while back the online Mother's group I participate in used to do weekly menus. That was right up my alley. I only had to think about it once. Move on with my week and follow the plan. It was stress reducing. I want to do it again. I am going to do it right here on my blog. It may only be this week or it will go on indefinitely. Who knows. But I am going to give it the old Girl Scout try. Yes. I was a Girl Scout. Doesn't that just fit into my personality? Anyway, on one of the organizing blogs I frequent, she does "Menu Plan Monday" and I'm going to jump right in this week. You can click here to see all of the other menus from the other contributors. They have some wonderful ideas and recipes. Yummy!
